Checchino claims to be the oldest surviving restaurant in Rome. Its menu refl ects the origin of the restaurant as a cookhouse to which workers at the nearby abattoir would bring the offal they received as part payment to be prepared. Hence you can sample animelle (tripe) and guancelle (pig cheek) if you are feeling brave.
