Even better news is the arrival of 26-year-old Swiss chef Daniel Humm, whose every dish is a revelation. Among the options are shiny asparagus topped with a prancing poached egg and seared black bass surrounded by a mustard-tinged aioli. Ladies who lunch and executives with clients will be your dining companions at the city’s hottest table.

Sylvain Portay has brought some of the best haute French cuisine in town to the light yet terrifically elegant setting of the Dining Room. Here, he serves up incisive flavours and some wonderful surprises in tasting menus ranging from three to eight courses. Feast on dishes such as lobster salad with haricots vert and caviar cream and seared day boat scallops resting on a brown butter emulsion. Sommelier Stephane Lacroix matches the kitchen’s keen eye and palate with great flair. If it’s a special occasion, this is the place.

It took a lot of guts for noted Napa Valley chef Philippe Jeanty to reinvent the venerable Jack’s restaurant and turn it into a clone of his eponymous wine country table. Well, the gamble worked and it’s now Jeanty at Jack’s that’s packing them in for both lunch and dinner thanks to some wonderful brasserie-style fare. Local power brokers check in weekly and dine on steak frites or sole meuniere, finishing with the signature chocolate crème caramel. Ask for a second-floor table for more privacy.

Chef Gary Danko is at the top of his game at his eponymous table. Classical French technique permeates his seasonal France- meets-California menu, showcasing delicacies like foie gras and Maine lobster. Everything, including the meat and game, is delicate yet imbued with flavour. One of three fairly priced tasting menus is the way to go and while the quietly elegant room may prompt you to sit up much too straight, the well-trained staff will see to it that you relax and enjoy this very special culinary experience.
