Vetri’s magic comes from transforming ingredients in earthy delicacies, as he does with spinach gnocchi or sweetbreads. Other specialities include an onion crepe with aged parmesan or sea-infused langoustine and scallops in delicate crustacean fume. Saturday nights are limited to a five-course tasting menu for $65 or a seven-course tasting menu for $90.
