Inventive dishes which make intelligent use of the tastes and textures of their vegetarian ingredients are what make this the sort of vegetarian restaurant in which even the most confirmed carnivores are happy to eat. The drinks, like the ingredients, are organically sourced and there are always several vegan options. Convenient for the High Street and Old Town, Banns is a boldly simple yet sophisticated space.

Typical of the new Scottish attitude to eating, it would be hard to hold the menu at Harvey Nic’s down to any one influence. Suffice to say, like the views from the tables and the clothes on the racks in the store, the options are all good. And the presentation is impeccable The restaurant is open after the store itself has closed —use the entrance from Multrees Walk—and it is worth arriving early in order to avail yourself of the cocktail menu at the small bar.

First timers will find it slightly tricky to negotiate the office-block entrance to the this roof-terrace restaurant. But once there, the views up to the Castle and across the Forth to Fife are well worth it. As is the food. Chef Tony Singh’s style is clean, fresh and satisfying, and there are à la carte and grill menus to choose from. The champagne bar is a draw for those who just want to look at the view.

Dark and atmospheric with décor best described as unconventional, the Atrium is one of Edinburgh’s sublime dining experiences, despite its unlikely setting in the heart of a modern office complex. The food is modern Scottish (or British if you will) at its best. The service is attentive and knowledgeable. And if the wine list is heavily tipped towards the expensive, it is because dishes like these deserve something special to round them off.

The Witchery is where Edinburgh families go when they want to celebrate something important. The service is old fashioned, the menu is traditional, rather than modern Scottish, and the venue is atmospherically dramatic. Add to this a seriously good wine list and it’ll be clear that this is the sort of restaurant where you know you’re getting good value for money, even though the prices are far from cheap.
