Every hole-in-the-wall eatery claims to serve ‘Chines’—one day someone is going to come up with a tandoori version of Peking duck. It will have to go a long way to beat the one at Empress of China. However, the main cuisine here is Szechuan, the spicy notes reverberating well on the Indian palate.

This is the Delhi outpost of Baba Ling’s impeccable Chinese food establishments in India. The food is Cantonese cuisine, heavily Indianised. Despite the long march from his Mumbai base, the crab is just great, whether in butter, garlic or Hong Kong sauce. The baby lobster gives the spare ribs in honey a run for their money.

Decidedly the classiest Chinese restaurant in the city, with superb cuisine, including a dim sum menu at lunch and good Peking duck. If you aren’t too worried about deep frying, try the crispy spinach. Another excellent and innovative starter is the lotus stem in a sweet-spicy sauce. Exquisite Chinese art, including a rare silk, adorns the walls and there’s a rooftop view.
